It’s been a while I shared a 15 min meal! So I thought I’d share one of my favourites. This is a classic midweek meal for me. I will often do variations of this, using fish and making the mash using other veggies like peas or cauliflower or broccoli!
And if you’re good at meal prep, this can be done under 15 mins! Yep too good to be true! Let’s get cooking 🤟🏻
To make meals fast from scratch, I used some shortcuts. Hope they’re able to help you as much as they do to me.
•Firstly, wash and microwave the potatoes whole for 5 mins- much faster than boiling. Once done, cut them in half and scoop the flesh. Add milk and butter while stirring continuously to fluff them up. Season with salt and pepper and no one will ever know our secret! Promise!
• for chicken, put the cutlets/pieces in a large bowl and season with onion powder, garlic powder, seasoning salt, paprika and 2 eggs! Make sure each piece is covered and coated.
Now add 2 cups of pancake mix! Yes, you heard it right! Pancake mix and once it’s dredged, add water to form a thick coating and let rest till you whip up a fancy slaw! #smartcooking
• for coleslaw, use store bought salad leave packet and turn it onto a Bowl. Add mayonnaise, salt and pepper, ketchup and sugar! Mix well and you’re done.
• finally deep fry those chicken pieces we had prepared earlier.
Don’t crowd the fry pan, 3 pieces at once is good! On medium flame, 8 minute in total and the crumb on the chicken is absolute delight!
For gravy, melt 1 tablespoon of butter in pan and add flour and cook for a minute while stirring constantly! Gradually add 1 cup of milk and season with salt and pepper. Stir with a whisk and bring to a boil till desired consistency is achieved. Serve immediately!
With few clever shortcuts and a bit of Mukti tasking, this crunchy crumbed chicken is Sensational and there’s no need for take out!
